Recipe serves 4 / use a 3 litre (6pt) casserole dish – best cooked in the microwave.

25g (1oz butter)
2 carrots, thinly sliced
1 medium potato thinly sliced
100g (4oz) red split lentils
900ml (1 1/2pt) chicken stock
1 bay leaf
