These are White Mushrooms (Agaricus Mushrooms) that have been allowed to grow until the skin has pulled back, revealing the gills, which have turned brown from some spore production. The top is still rounded. Some portion of the skin may still cover some of the gills. Large flat mushrooms have more flavour than young buttons.
