Romaine lettuce grows in a long head of sturdy leaves which have a firm rib down their centers. The dark green outer leaves are the most nutritious while the interior leaves are paler in color, and more delicate in flavor. It’s great in a salad, but also good baked with a splash of oil or toppings.
