Tomato and Lentil Soup

A tasty winter warmer that’s quick and easy to make.

Recipe serves 4 / use a 3 litre (6pt) casserole dish – best cooked in the microwave.

1 medium onion, chopped
25g (1oz butter)
2 carrots, thinly sliced
1 medium potato thinly sliced
100g (4oz) red split lentils
900ml (1 1/2pt) chicken stock
1 bay leaf
salt and pepper
4-6 large tomatoes


  1. Place onion and butter in a bowl. Cover and cook on high power for 3-4 minutes until the onion is soft.
  2. Add all the other ingredients, except tomatoes, cover and cook on high power for 4-5 minutes then simmer power for 20 minutes or until lentils are tender. Add tomatoes.
  3. Blend in a food processor. Reheat on high power for 3 minutes.
